The light is hooked up to a sensor that monitors level and pressure. Either you are low on oil (add oil), have low pressure (will need a new oil pump), or the sensor is going bad (will need new sensor). My thought is your pump is going bad because it increases pressure as you step on the gas, but the other two are possible. Check your oil first, make sure you have a good connection to your sensor (use a mechanic or book if you don't know where it is at) and if both are good, have a mechanic check the pump.
